Twenty-one days in silver

There is a room where nothing is asked to hurry.

In it stands a silver vessel, and inside the vessel a slow gold light gathers over three weeks. We do not force it into being. We set the ingredients down, close the lid, and let time do the part that no machine can shorten.

Twenty-one days is an inconvenient number. It is long enough to be costly and short enough to be tempting to skip. We keep it anyway, because the number is the point.

What the days look like

Morning one: threads of Kashmiri saffron settle into cold-pressed sweet almond oil. The colour is pale, almost shy.

By the second week the pour has deepened to amber. Fine flakes of 24K gold drift when the vessel is moved, then come to rest again.

On the last day the oil is decanted by hand into small glass bottles, fifteen millilitres at a time. Nothing is rushed to meet a deadline; the batch is ready when the batch is ready.

Slow is the point
